EASY SUMMER DESSERT ALERT! There is something about grilled fruit that just screams summer. These little gems are so delicious, and so quick, that they will make all your summer grilling menus from here on out. Seriously, everyone I have ever made them for loves these!
Combine the juice of 1 lime, two tbsp honey and a small pinch of salt together in a small bowl. Slice peaches in half and remove the pit.
Pre-heat cooking surface and brush cut surface of peaches with a small amount of olive oil. Grill peaches cut side down for about 7-10 minutes on a grill pan, outdoor grill, or George Foreman until the fruit is soft and good grill marks are present.
While still piping hot, drizzle with honey lime sauce. I love to serve mine with vanilla bean ice cream with extra sauce on top. If desired, you can easily remove the flesh of the fruit from the skin but it is difficult to keep the peach whole. If you want to remove the skins it would be much easier to top the ice cream with diced pieces of the fruit.
